Miguel’s Jr. is officially answering the calls of its fans. On Wednesday, February 25, 2026, the Southern California-based quick-service chain announced the highly anticipated return of its rich, slow-cooked carnitas.

The fan-favorite protein takes center stage in four new and returning limited-time menu items, all paired with a spicy serrano salsa to deliver a fresh kick of heat in every bite.

The “Carnitas Craze” Lineup

The new menu features four distinct dishes designed to showcase the tender, slow-cooked meat.

  • Carnitas Quesadilla: Monterey jack cheese is topped with crispy and tender carnitas, cilantro, and onion, all folded into a 12-inch Sonora flour tortilla and served with serrano salsa.
  • Carnitas Crispy Cheese Taco: This item features a 5-inch yellow corn tortilla loaded with grilled Monterey jack cheese, crispy carnitas, serrano salsa, cilantro, and onions.
  • Carnitas Bowl: A protein-forward option featuring Spanish rice topped with whole pinto beans, carnitas drizzled in serrano salsa, chunky guacamole, cilantro, and onion.
  • Cali Burrito with Carnitas: A new 2026 twist on the brand’s classic Cali Burrito, wrapping seasoned fries, slow-cooked carnitas, jack cheese, chunky guacamole, serrano salsa, tomatoes, cilantro, and onions inside a flour tortilla.
