Source86 supplies food-grade cocoa powder pressed from the beans of Theobroma cacao L. at a standard 10 to 12 percent cocoa fat, with reduced-fat and high-fat grades available. Colour is specified against an approved retained standard or Hunter L* value rather than a description, since colour is the parameter most buyers qualify against at approval.
Cocoa powder carries chocolate flavour and dark colour into bakery, confectionery, beverage, and frozen dessert systems without the cocoa butter load of chocolate liquor, which makes it the practical selection where fat is contributed elsewhere in the formula. Supply is concentrated in Peru, where grower groups hold the organic certification and farm-level traceability that certified programmes require, with additional powder capacity in China and India. Cadmium and lead results are issued per lot. Samples are available for formulation trials.

Production & Sourcing
West Africa supplies roughly 70 percent of the world cocoa crop, but Source86’s qualified base sits in Peru, where grower groups and processors carry the organic certification and farm-level traceability that certified and fine-flavour programmes require. Additional powder capacity in China and India covers conventional volume where price rather than origin story drives the specification.
- Harvesting: Ripe pods are cut from the tree by hand and opened to release the wet beans and surrounding pulp.
- Fermentation and Drying: Beans are fermented under pulp for several days to develop flavour precursors, then dried to a stable moisture for export.
- Cleaning, Roasting, and Winnowing: Beans are cleaned of stones, fibre and metal, roasted to develop flavour, then cracked and winnowed to separate nib from shell.
- Alkalization: Where an alkalized grade is specified, nibs or liquor are treated with a food grade carbonate, raising pH and darkening colour.
- Grinding and Pressing: Nibs are ground into liquor, then hydraulically pressed to remove cocoa butter and leave a press cake.
- Pulverizing, Stabilizing, Sieving, and Packing: Cake is milled to a fine powder, thermally stabilised so residual cocoa butter crystallises, sieved to specification, then metal-detected and packed with lot coding traceable to the pressing run.
