Dried oregano (Origanum vulgare and Origanum onites) is supplied as cut and sifted leaf, ground, and powder, in conventional and certified organic programmes. Volatile oil content is reported per lot, since it sets the inclusion rate and varies between cuttings and between stored and current-season crop.
Its principal uses are as the defining herb in pizza and tomato-based sauce systems, and as a core component of dry seasoning blends, rubs, and processed meat formulations. Turkish material carries the higher volatile oil levels that sauce and seasoning buyers specify and is steam treated as standard where a ready-to-eat process requires reduced microbial counts, while Indian growers supply the certified organic volume.
