Bulk Lime Juice Powder
When a formula needs real lime flavor and tartness but cannot take on water, bulk lime juice powder is the practical answer. It is lime juice (Citrus aurantiifolia) dried into a free-flowing powder that blends into seasonings, drink mixes, snack coatings and dry bakery premixes, and reconstitutes when liquid is added.
Source86 offers two processing routes:
- Spray-dried lime juice powder: bright light yellow, economical, in conventional, premium and certified organic grades.
- Freeze-dried lime juice powder: bright to light green, with a fresher, more aromatic lime character.
Both are produced in China by established fruit-powder processors and supplied in bulk to food and beverage manufacturers, seasoning houses and R&D teams. Organic and Kosher documentation is available upon request.
Request a sample of each format to compare flavor in your application.

How It’s Produced
- Juice Extraction: Mature limes are washed and pressed to extract juice.
- Filtration and Pasteurization: Juice is filtered to remove pulp and seeds, then pasteurized.
- Concentration: Water content is reduced to intensify flavor before drying.
- Drying: Juice is spray-dried in hot air or freeze-dried under vacuum, depending on grade.
- Milling, Sieving and Packing: Powder is milled and sieved for uniform particle size, then packed in moisture-barrier foil bags.
