Production & Sourcing
Source86 sources dried figs from established processors in Turkey, the world’s leading fig-producing country. Working with multiple Turkish processors supports consistent supply, format flexibility and reduced dependency on any single producer.
How It’s Produced
- Harvesting: Figs ripen and partially dry on the tree, then are collected and sun-dried.
- Washing and Sorting: Dried figs are washed, sieved and visually inspected, then screened for aflatoxin under UV light.
- Processing: Figs are kept whole, diced, or minced into paste, with seeds kept or crushed. For freeze-dried grades, figs are sliced or quartered and freeze-dried.
- Foreign Matter Control: Product passes through magnets, X-ray sorting and metal detection.
- Testing and Packing: Each lot is tested against specification and packed in lined cartons or bulk packaging.
Harvest & Supply Availability
In Turkey, figs are harvested from July to early October, with a peak in August and September. Dried figs and fig paste are stored and processed year-round, so bulk supply is available throughout the year.
