Source86’s bulk coconut chips are sliced from the dried kernel of mature coconut (Cocos nucifera L.) at 0.5 to 1.5 mm thickness and 10 to 50 mm length. Slicing rather than shredding is what separates the chip from desiccated coconut, and it is the reason the piece stays visible in a finished product. Fat runs 62 to 68 percent.
Grades cover unsweetened and sweetened compositions, each untoasted or toasted, in conventional and certified organic programmes. Sweetened material carries 18 percent added cane or coconut sugar. Supply is concentrated in Sri Lanka, with additional volume from Indonesia, Vietnam, and the Philippines. Sulfite status varies by origin and is confirmed per lot. Coconut palms fruit continuously rather than on an annual harvest, so production runs year-round without the seasonal gaps common to other dried plant ingredients. Origin selection turns on certified organic status, whether a sulfiting agent is used, and the slicing tolerances a facility can hold.
1. Harvest and Kernel Preparation: Mature nuts are collected at full kernel development, then dehusked and deshelled, with the brown testa pared off where a white chip is specified.
2. Washing and Thermal Treatment: Kernels are washed and given a controlled hot water or steam treatment, which sets the microbiological baseline the finished specification depends on.
3. Slicing: Treated kernels are sliced to the specified thickness and length, the step that separates this product from desiccated coconut and fixes piece geometry.
4. Sweetening: Sweetened compositions are infused or coated with sugar syrup at a controlled ratio, then equilibrated. Unsweetened material bypasses this stage.
5. Drying and Toasting: Chips are dried to target moisture and water activity. Toasted grades continue to a specified colour standard, then cool before packing.
6. Sifting, Inspection, and Packing: Material is sieved free of fines, passed through metal detection and inspection, then packed with lot codes traceable to origin and treatment.
